Pumpkin Pleasecake


  • Crust:
  • 3/4 cup walnuts
  • 3/4 cup pecans
  • 1/4 cup dates OR half dates, half agave
  • Filling:
  • 2 cups soaked cashews
  • 3/4 cup melted coconut oil
  • 3/4 cup agave syrup
  • 1/3 cup carrot juice
  • 1 small yam or piece of sweet squash such as butternut
  • 1 tbsp. pumpkin pie spice
  • 1/4 tsp. sea salt


Process crust ingredients until the mixture holds together.  Press into pan and place in freezer while making filling.   Blend filling ingredients until creamy and smooth.   Pour into crust and place in freezer to set.  Thaw slightly to serve.
