Creamy Coconut Yogurt
- 2 cups of young coconut meat
- 1/2 cup of coconut water or filtered water...amount may be adjusted as desired for easy blending and a thicker or thinner yogurt
- 4 probiotic capsules
Place all ingredients in a high speed blender and blend until smooth. Cover with a towel and place in a warm place for approximately 8 hours to culture. Time will vary depending on temperature.....in very warm, humid weather it is advisable to check it starting at about 6 hours. For a more sour yogurt, let it culture for a longer period of time.
Will keep for up to 1 week in the fridge.....flavour will develop a more sour taste the longer you keep it. Excellent in smoothies and as toppings for other desserts.
